The Greek coastal region of Macedonia is characterized by a Mediterranean climate. Here on the Thermaic Gulf, as the sea area of the Northwest Aegean is called, the extraction of sea salt has a tradition that goes back thousands of years and can be traced back to antiquity. In addition to conventional sea salt and the classic Fleur de Sel, a salt farmer has now succeeded in creating a flake salt in the shape of a pyramid. For this purpose, brine is pumped off on a section of coast with particularly high water quality, which can filter out shell remains, sand and impurities through specially developed filter systems. Now the actual production process begins, in which the sea brine is brought to a higher temperature in stainless steel tanks. As the water evaporates, the salt concentration increases until the salt content and temperature interact perfectly to create small salty pyramids on the surface of the water, which only need to be carefully harvested and dried. These mild salt pyramids are of exceptional quality both in taste and appearance, a finger salt in its most beautiful form. Ideal for seasoning at the table. Greek pyramid salt should not be confused with the better known Cypriot pyramid flakes.
